Re-inventing EVL's Culinary Scene

Cadillac Jack's construction nearing completion; restaurant to open this month!
Another ski season is well underway, and per usual, the village and the resorts are chock full of changes that will no doubt positively enhance the experience for all who visit.  We've seen a lot of relocations, remodeling, rebranding, and more out of the culinary landscape here in Ellicottville.  One of these ‘new’ additions will be taking up shop in a familiar location to many, right on Monroe Street.  Cadillac Jack's is proudly opening their doors at the storefront which was once home to Hoagie's Pizzeria.  Snowed-In caught up with owners / operators Tina and Tom Zerbian to find out what we can expect from their exciting re-invented culinary adventure.

For those new to the scene around here, Cadillac Jack's got its start back in 1994 when Tom Zerbian and sister, Janet Tekavec assumed control of a charming building located essentially at the base of Holiday Valley Resort.  This spot was frequented by the ski clientele of Ellicottville, as it was known for its 'après ski' vibe with an incredible view of the slopes from the bar, an expansive menu, and lively entertainment to cap off a perfect day on the hill. Though happening in-season, the business would shut down for the spring, summer and fall months, leaving only a short time frame for the owners to show what they could do.  Fast forward 20 years, and Tom (aka ‘Zerb’) and his wife, Tina now have the ability to put their self described ‘foodie’ skills to work in their new location.  Zerb is pictured with crew members from Kinley Corporation, the general contractors on the job.

Many of you will remember Hoagie's as a one level pizzeria, with a young staff cranking out some of the best pizza and subs around.  What those who enter the new Cadillac Jack's location can expect however, is a beautifully re-done TWO level bar and restaurant, rich with local flavor and character.  Tina describes their decor and mission as “vintage,” with many call-outs to the early 1900's of Ellicottville.  Patrons will be exposed to an incredible collection of postcards (on loan from the family of Don Scharf) from the village during that era, which tie in with their brand story throughout the restaurant and their menu.  Tina also lightheartedly alluded to their new bar, which she said would be incredibly unique, with nothing else in town comparing to it.  To top it all off, they've also added an outdoor patio deck, which will be the perfect place to enjoy one of their signature cocktails when summer rolls back around.

Part of Cadillac Jack's re-emergence will also be their drastically changed menu, with the ‘après ski’ fare being a thing of the past. Zerbian revealed many new improvements to the menu, including locally sourced farm-to-table ingredients ranging from herbs, vegetables and meats.  Another exciting new feature within the restaurant is a raw bar featuring oysters, clams, and other selections when in season.  The talented kitchen staff will bring years of experience and worldly concepts to the table, Tina explained, thus fulfilling their vision of being a dynamic four-season restaurant.  Cadillac Jack’s will host several wine and beer pairings throughout the year as well, which will certainly draw attention throughout the community.
